In January of 2007 Aaron Sanders and Max Toste opened Deep Ellum. 

Their goal was “to be the awesomest bar they could be!”, a real neighborhood joint with a focus on old fashioned hospitality, serving the best beer available, crafting high-quality cocktails, and making the most delicious comfort food ever to come out of such a tiny kitchen. 

After a 13 year run full of successes and challenges alike (including opening two locations of sister restaurant Lone Star Taco Bar) Deep Ellum closed its doors in 2020.

 In March of 2023 Deep Ellum returned to Waltham's Moody street, with a new neighborhood to serve and an even tinier kitchen.

 Aaron and Max’s goal is the same, but with a renewed vigor and a fresh perspective thanks to an expanded team including Brian Beattie, Glen Cancelleire, and Jose Paz.

Together in their little bar they will provide the hospitality and quality that Deep Ellum has stood for since the beginning.
